Granola

Dry Ingredients:
2 cups of oats
1/2 cup mixed nuts *
1/2 cup of mixed seeds (pumpkin seeds,sunflower seeds, flax seeds, chia seeds, etc. )
2/3 cups of dried fruit (apricot, craisins, raisins, dried blueberries, chopped dates, shredded coconut…)
Some coca nibs or enjoy life chocolate chips…
a little salt and some optional spices (pumpkin spice, ginger, cinnamon…)

Wet Ingredients:
1/2 cup of maple syrup or agave nectar
1/4 cup of melted coconut oil

*wether you decide on pecans/walnuts/cashews/almonds I’d recommend you break them into smaller pieces so you don’t have huge chunks

Directions:
Preheat oven to 400 degrees, in a large bowl mix the dry ingredients (but not the dried fruit, it doesn’t tend to taste good after it’s been cooked đŸ˜‰ ), in a second, smaller bowl, mix the wet ingredients and stir into the dry ingredients. Spread onto a baking sheet and bake for 20 mins stopping halfway to stir the mixture around. Take it out, stir in the fruit and let cool.

Sprinkle it onto a smoothie bowl, stir it into some coconut yoghurt, pour some rice milk into it and make cereal, turn it into a granola bar,…Enjoy!
