I can’t exactly say that these cookies are “healthy” but they are vegan. And they are delicious. So if you’re looking for a delicious, vegan, oatmeal cookie, I got you covered!
Note: Normally I like to work with ingredients that are natural but since this recipe is adapted from a regular cookie recipe that I use to love, they do call for some vegan substitutes but trust me, it’s worth it.
1 cup softened vegan margarine
1 cup sugar*
1/2 cup packed brown sugar*
1 vegan egg (2 tbsp water, 1 tbsp oil, 2 tsp baking soda)
1 teaspoons vanilla
1 2/3 cup flour
3/4 Teaspoon baking soda
1/8 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups rolled oats
Optional: Raisins/Craisins/Choc Chips
*You don’t necessarily have to stick to these specific types of sugars, you can chose your own ratio of cane sugar/coconut sugar/etc. and feel free to put less sugar than what this calls for (this is based off the original recipe).
Combine ingredients and mix, roll into little balls, flatten on a pan and cook at 350F for 10-12 minutes, let cool.
